Been 3 for 3 to date with this recipe, so posting here for easy, future reference. The key here is to have two things: 1) a digital thermometer stuck into the thickest part of the leg and 2) the turkey to be completely thawed out (so make sure it’s defrosting at least 2 days before planning to roast it.
