What’s Baking – Blueberry Oatmeal Muffins

Looking for an alternate way to eat oatmeal and blueberries? I found this recipe from runningwithspoons.com and this one stood out because it used Greek yogurt instead of oil, and used honey instead of sugar. The end result, a deliciously moist and tasty muffin, and a great start to breakfast.

I made some substitutions to the ingredients below (changes are in red text below). The link above has the instructions and nutrition facts

  • 1 cup (120 g) all-purpose flour
  • 1 cup (80 g) quick oats (instead of old fashioned rolled oats)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 large egg
  • 1 cup (225 g) coconut flavored Greek yogurt (instead of plain)
  • 1/4 cup (80 g) honey
  • 2 Tbsp (24 g) coconut palm sugar (did not use)
  • 1/4 cup (60 ml) unsweetened almond milk
  • 2 tsp vanilla extract
  • 1 cup (140 g) blueberries, frozen or fresh
